Kohlrabi
Kohlrabi is a stem vegetable belonging to the Brussels sprouts, broccoli, cauliflower, cabbage family. It provides 138% of your daily vitamin C, as well as potassium, and antioxidants. Kohlrabi should be rinsed in water for ten to fifteen minutes before being eaten, cooked or raw!

Romanesco Broccoli
Romanesco broccoli is technically a 'flower' that comes from the same family as Brussels sprouts, broccoli, cauliflower, cabbage family (same as Kohlrabi!). This geometric veggie is similar tasting to cauliflower, but is easier to digest. Romanesco broccoli can be eaten cooked or raw, and is tasty with olive and red wine vinegar.

Enoki Mushrooms
Enoki mushrooms are Japanese mushrooms used in Asian cooking, as well as Chinese and Japanese medicine. They have great for anticancer and immune boosting effects, known for helping against liver diseases and stomach ulcers. Enoki mushrooms are great in Thai soups or Asian salads.

Spaghetti Squash
Spaghetti squash is a winter squash, originating from China. This stringy vegetable is high in fiber and vitamins B, A, C, K, and E. Spaghetti squash is a great substitute for spaghetti because it has more nutritional value than pasta noodles. You can scrape out the strings and bake in the oven at 375 degrees for some veggie pasta.
